Summer Pudding | Pudding Recipes | Pudding with Berries | Healthy Desserts

A pudding with mixed berries, easy to make and a perfect cool dessert for a hot day.  Moreover this is a healthy dessert. To make it more healthier version replace white sandwich bread slices with whole meal bread slices. Got this recipe from "Healthy Desserts" book.


  • White sandwich bread slices – 18 (crusts removed)
  • Mixed Berries - 3 cups (450 g)(Strawberries, blueberries, raspberries, redcurrants)
  • Sugar – ½ cup (adjust accordingly) 
  • Water – ½ cup
  • Low fat plain or vanilla yogurt – ¾ cup to serve


Line four 1 cup (250ml) pudding moulds with cling film, allowing extra to hang over the sides. Cut four rounds of bread to fit the bases of the moulds and another four slightly larger rounds to fit the tops. Slice the remaining bread into ¾ inch (2 cm) strips.

Add the berries, sugar, and water in a small saucepan over medium heat. Simmer until the berries are tender and release their juices, for about 5-10 minutes.

Dip the four smaller bread disks into the berry syrup and arrange them in the moulds. Dip the bread strips and line the sides of the mould. Fill with the berry mixture.

Place the remaining larger bread disks on to and spoon the syrup over the top. Cover and chill overnight.

To serve, invert the puddings onto serving plates. Remove the plastic wrap. Serve with yogurt passed through separately.


I had used only blueberries and blackberries since other berries are not available at my pantry. If you use raspberries, the filling will be more colourful.
