For this pudding any bread will work, I used regular sandwich bread, but richer the bread, the richer the bread pudding.
- Egg – 1
- Granulated sugar – ¼ cup
- Milk – 1cup
- Vanilla extract – ½ tsp
- Ground cinnamon – a pinch
- Stale bread cubes - 1 ½ cups
In a medium bowl whisk together the egg ad sugar with a fork. Stir in the milk, vanilla, salt, and cinnamon.
Add bread cubes and toss so that they will be coated evenly with custard. Set aside for 15-20 minutes.
Divide the mixture between two large mugs. Pack the mixture in so that there is very little air between the bread cubes.
Microwave separately for 2 minutes each or until the custard is absorbed and the pudding is firm.
