Simple mango pudding which can be done within 15 minutes.
- Mango – 1 or mango puree – 1 cup
- Unflavoured gelatine – 3 tsp
- Cream or evaporated milk – ½ cup
- Water – ½ cup
- Sugar – ½ cup
- Vanilla extract – ½ tsp
- Whipped cream – for serving
Peel and slice the mango and puree the flesh in a blender. Soften the gelatine powder in water and bring it to boil, continue stirring until the gelatine completely dissolves. Set aside to cool.
Combine mango puree and gelatine mix thoroughly.
Stir the sugar and cream or evaporated milk in a bowl until the sugar completely dissolves. Add to the mango gelatine mixture. Stir in the vanilla extract.
Pour the mixture into serving cups and chill until firm.
Top with whipped cream and coloured rice and serve.
