This dessert is quick, easy and elegant, and perfect for when you have unexpected guests. It is also a nice comfort food for an upset stomach.
- Fresh Orange Juice – 1 cup
- Zest of 1 orange
- Water – 1 ¼ cups
- Sugar – 1 cup
- Cornstarch – 2 ½ tbsp.
- Pistachio – 2 tbsp coarsely chopped
In a medium saucepan over medium heat, whisk together the orange juice, zest, water, sugar, and cornstarch.
Whisk constantly for about 8 to 10 minute, or until mixture thickens. Pour curd into 5 or 6 individual serving cups and top with chopped pistachio nuts.
Let cool, then refrigerate for a few hours before serving.
