Semiya Payasam/Vermicelli Kheer

Vermicelli Payasam is my favourite payasam. Since this is easy to make I make this payasam whenever I crave for sweet item.  

Vermicelli – 1 cup
Milk – 5 cups
Sugar – 1 cup (adjust accordingly)
Ghee – 3 tbsp
Cardamom pods -4
Raisins – 2-3 tbsp
Cashew nuts – 2-3 tbsp


Heat a fry pan, add ghee and fry raisins for few seconds, drain raisins and keep aside. Fry cashews in the same pan for few seconds, drain and keep aside.

Add vermicelli in the same pan and fry it until the colour changes slightly.  Remove the pan from heat and keep aside.

Bring the milk to heat in a separate sauce pan, when it starts to boil, reduce the heat and add fried vermicelli and sugar, stir in. Crush the cardamom and add.  Cook until the vermicelli becomes soft.

Add fried raisins and cashew nuts just before you remove from heat.

Serve hot or refrigerate it and serve cold.
