Beetroot Soup


Beetroot – ¼ kg

Onion – 1

Potato – 1

Lime – ½

Mint – few

Boiled Milk – ½ cup

Pepper – as required

Salt – as required

Oil – as required


Peel off the skins of beetroot and potato and cook them until soft.

Chop onion and heat a wok with oil, fry onion until soft.

Grind cooked beetroot, potato and onion into paste.

Transfer the ground paste into a bowl, add enough water. Squeeze lime and add.

Add pepper and salt. (Or you can add pepper and salt before serving.)

Heat the soup, once it starts boil remove from heat.

Add boiled milk, mint and serve.

The first time I tasted beetroot soup was during my trip to Jaipur. It was delicious and since then I make it quite often but add tomato and sometimes carrot to it. I will try adding milk next time.
